Other ways to prepare caramelized onion in Thermomix

Sugar-free

In addition to using sugar, we can also caramelize our onion with other ingredients such as honey (in this case, it would be the substitute for the caramel that we have in our recipe and we would add it almost at the end so that it does not burn), brown sugar, stevia, panela, in short, any sweetener.

If, on the other hand, we want to completely do without this sweet ingredient, we can do it without any sugar, since the onion has this ingredient naturally. The key here is to confit the onion by cooking it for a long time in oil in a gentle and progressive way. To do this, we would put for example:

  • 1 kg of onion
  • 100 g olive oil
  • 200 g of water or wine (or 100 g of brandy + 100 g of water)
  • salt to taste
  1. Peel the onions and cut them into quarters. We put half in the glass and chop during 6 seconds, at speed 4. We reserve and do the same with the other half.
  2. We put the butterfly on the blades, put all the chopped onions in the glass and add the oil and salt. We program 20 minutes, varoma temperature, left turn and spoon speed.
  3. We add the liquid we have chosen and program 20 minutes, varoma temperature, left turn and spoon speed. 
  4. We check that it is golden brown, and if not, we program 10 more minutes at the same temperature.

Non-alcoholic

There are many recipes that use some type of alcohol in their preparation. The most typical is to use brandy, but you can also use rum, cognac, whiskey, beer (with or without alcohol) or wine. If you don't want to use alcohol, a good substitute is vinegar. We can use alcohol vinegar or a good alternative is to use balsamic vinegar, which has that sweet touch that goes wonderfully with onion.

We can also add a couple of tablespoons of water.

Another interesting option is to do without the salt and use soy sauce.

How to preserve caramelized onion

Since we start to make the caramelised onion for almost an hour, it is worth keeping the remaining one well for other preparations. Below you will see a selection of recipes so that you can get the most out of this ingredient.

You can caramelized onion freeze it in tuppers or freezer bags or store it in a recent airtight in the fridge for 10 days.

Traditional caramelized onion recipe (without Thermomix)

The key to making a good caramelized onion is the patience and a good skillet that does not stick, since we will have to cook it for a few 40 minutes over very low heat.

The recipe is super simple, let's get to it!

  • 1 kg of onions
  • 100 g olive oil
  • a pinch of salt

We peel the onion and cut it into finite julienne strips. We heat the oil in the pan and add the onion. We cook it for 35-40 minutes, over low heat, stirring from time to time.

We will see that the onion becomes transparent and then it will acquire a golden color. Be careful not to burn, because if not, it will become bitter. That is why it is very important that you remove it from time to time.

We can intensify the sweetness by adding a couple of tablespoons of sugar (when there are 10 minutes left) or caramel (when there are 5 minutes left).

      If you want to keep the caramel liquid, I think that with 50-75 g of agave syrup you have enough, and you should add it at the same point that the sugar is added.

      Yes, you could also double the amount of the recipe. In point 1, I would crush it for 10 seconds so that the entire amount of onions is crushed well. And in point 2, when the 35 minutes are up, check that it is to your liking. And if not, program a few more minutes, same temperature and speed.
