Caramelized onion roll with balsamic vinegar of Modena

Stay with this recipe for caramelized onion because you can use it in many dishes. The one that comes in the basic book, if I remember correctly, is made with liquid caramel. Today's does not have this ingredient. We substitute it for that special and rich balsamic vinegar: the balsamic vinegar of Modena.

In this case I have used the caramelized onion to make a puff pastry roll. Highly recommended if you have guests and you want to surprise them with an original aperitif that is also very easy to prepare. It is made like the angelica braid, giving it the shape of a gypsy arm and then making a longitudinal cut to obtain two long strips that we will then roll up.
