Here you have another proposal for Valentine's Day or for any occasion in which you want to surprise. They are some snacks made with choux pastry and stuffed with a cream of mushrooms and bacon.

With these quantities come a few snacks. If you are thinking of a romantic dinner for two, there will be too many. One suggestion is that, before baking the dough, a few of them put sugar on top. Once cold, you fill them with whipped cream you put chocolate on top ... and you will have some homemade profiteroles and delicious!

And if you do not have time or do not want to complicate with the dough, do not overlook the mushroom and bacon cream: you can use it as pate or even to make a lasagna. It will be for ideas!

Ingredients

For the choux pastry:

  • 250 g of water
  • A pinch of salt
  • 100 g butter in pieces
  • 150 g of pastry flour
  • 4 eggs (about 250g approx.)

For the mushroom and bacon cream:

  • 60 g onion
  • 75 g of bacon in cubes
  • 10 g of extra virgin olive oil
  • 250 mushrooms or mushrooms, chopped
  • 60g milk
  • 70 g of water
  • Sal Island
  • Pepper
  • 25 g flour
  • 1 pinch of nutmeg
  • 1 teaspoon of chopped parsley
  • 10 butter g

Preparation

  1. We put the water, salt and butter in the glass and mix by programming 10 minutes, 100º, speed 2.

  2. Add the flour and mix for 30 seconds at speed 4. Let it temper for about 10 minutes but in that time we mix the dough in speed 4 on 5 occasions.

  3. We let the dough cool in the glass (another 10 minutes approximately) and we add, with the blades in motion at speed 4, the eggs, one at a time. Once incorporated we program 30 seconds, speed 5.

  4. We put the dough in a pastry bag. We cover a couple of baking sheets with parchment paper. With the pastry bag we are making our sandwiches, the size of a walnut, and leaving a separation between them because then they grow.

  5. We bake them in a preheated oven at 180º for approximately 20 minutes.

  6. While it is baking we can prepare the mushroom cream.

  7. We put the onion in the glass and crush it in speed 7 (in about 2 or 3 seconds it will be chopped). We lower with the spatula what has remained on the walls of the glass.

  8. Add the bacon, oil and mushrooms. We program 12 minutes, varoma temperature, speed 1.

  9. Add the milk, water, salt, pepper, flour and nutmeg and program 30 seconds, speed 8. Again we help each other with the spatula to lower what is left on the walls.

  10. We program 8 minutes, 90º, speed 1.

  11. At the end of the time, we wait a couple of minutes so that it is not so hot. And, always with the beaker on, we grind some 30 seconds at speed 9.

  12. Now add the chopped parsley and butter and mix by programming 10 seconds, turn left, speed 4.

  13. With a pastry bag or a syringe we fill the snacks, putting the cream of mushroom soup on the basis of them.

Notes

What would be the dough for the snacks can be prepared in advance. We can fill them when the cream is still hot or, if we have also made it before, once it is cold. In both cases it looks good.
