The origin of the famous Caesar salad is so uncertain that it is almost a legend. As is the original recipe of which there are so many versions as days in the year.

When talking about the salad, it must be borne in mind that not all of them are light. This that I present to you today is not a salad to use, nor one that we can consume if we are taking care of our weight. Although it has lettuce, it is combined with other ingredients that shoot up the calories. So it is best to consume it as Sole plate since it has all the food groups: vegetables, meat, eggs, dairy ...

Delicious Caesar salad, in which the mild flavor of lettuce is combined with Parmesan, croutons and fried chicken. And seasoned with its special seasoning.

Ingredients

For the dressing:

  • 40 g of Parmesan cheese
  • 1 level tablespoon (dessert) of Dijon mustard
  • 1 tablespoon (dessert) Worcertershire sauce
  • 8 drops of Tabasco
  • 15 g of red wine vinegar
  • 1 anchovy
  • 1 egg
  • 1 yolk
  • Black pepper
  • 100 g olive oil

For the salad

  • 1 cos
  • 1 chicken breast
  • 35 g croutons or fried bread tostones
  • Frying oil
  • Parmesan cheese flakes

Preparation

  1. Grate the cheese for 10 seconds, speed 6. Add the rest of the dressing ingredients except the oil. Mix for 30 seconds, speed 8. Lower the contents onto the blades.

  2. Put a bowl on top and weigh the oil. Reserve.

  3. Fill the beaker halfway with water and place it on the lid. This way, the beaker will have more weight and will filter the oil better. Program 1 minute, speed 4 and pour the oil little by little into the lid. It will fall into a thread and emulsify with the rest of the ingredients.

  4. Remove the sauce and reserve in the refrigerator.

  5. Wash, drain well and chop the lettuce. Cut the chicken breast into strips and fry in hot oil. Prepare the croutons by frying the bread cut into squares.

  6. Mix the lettuce with the chicken and the croutons. Garnish with some freshly cut Parmesan cheese flakes. Present the salad and dressing separately so that each can be served to taste.

      Hello marisol:

      worcertershire sauce is a liquid seasoning used as a sauce flavoring. You may know it by the name of worcester sauce, Worcestershire sauce, or just perrins sauce.

      You can find it in large supermarkets or in foreign product stores.

    The Cesar salad is originally from Tijuana, Baja California, Mexico and NEVER has chicken
