Christmas soup with cream cheese filled pasta

This soup with pasta filled with cream cheese It is typical of Catalan Christmas. It is really made with galets but where I live I have not found them so I have replaced them with the shells that you see in the photo.

We cook the pasta in Thermomix (in this case follow the indications that I put here instead of the post of pasta cooking), then we reserve it and make the broth. Finally we prepare the cream cheese, also in Thermomix, and fill the galets or, in my case, the shells with it.

Surely many of you who are reading me will be thinking that this is not the traditional one or that you like the one you prepare at home more ... cheer up and tell us your secret!

Ingredients

For the pasta:

  • 1500 g of water
  • 1 teaspoon salt
  • 1 tablespoon of extra virgin oil
  • 150 g of pasta (galets or shells -I have used large shells- to fill)

For the broth:

  • 1 small carrot (in 2 or 3 pieces)
  • 1 small turnip (in 2 or 3 pieces)
  • 1/2 leek, just the white part (in 2 or 3 pieces)
  • 1/2 medium onion
  • 50 g of extra virgin olive oil
  • 200 g of beef in pieces (blood sausage)
  • 1300 g of water
  • 1 tablespoon of homemade meat broth or 1 tablespoon of salt

For the cheese cream:

  • 200 g of cream cheese (Philadelphia type)
  • 100 g of blue cheese

Preparation

  1. We pour the water, salt and oil into the glass. We program 12 minutes, 100º, speed 1.

  2. Add the pasta through the nozzle and program the time indicated on the package, 100º, left turn, spoon speed.

  3. We drain the pasta using the basket and wash it with cold water. We booked.

  4. We put all the ingredients of the broth in the glass and program 45 minutes, 100º, left turn, speed 1.

  5. At the end of the time, strain the broth with a strainer (better if it is a fine mesh one) and reserve it in a pot or saucepan.

  6. We wash and dry the glass well.

  7. We put the cheeses in the glass and program 30 seconds, speed 5. If the pasta is shells like the ones you see in the photo, fill it with the help of a spoon. If they are galets, we can use a pastry bag with a not very large nozzle.

  8. We heat the reserved broth. At the moment of serving we put the stuffed pasta in individual plates and pour the hot broth over it.
