A delicious cake starring in all its layers by a delicious chocolate and with different textures. We will learn how to make a chocolate mousse, a ganache and a chocolate sauce to finish off this delicatessen in our Thermomix.

Ingredients

Chocolate Mousse

225g spread cheese
125g sugar
2 tablespoons of milk
50g of special cocoa for pastries
225g of sweetened whipped cream (225g of cream and 50g of sugar)

Chocolate Ganache

200g of chocolate for coverage
200g of liquid cream

Other ingredients

400g of chocolate cookies

Preparation

For the chocolate mousse we need whipped cream. If you prefer to do it with our Thermomix, we will pour the 225g of very cold cream into our glass along with the 50g of sugar. We program 1 minute at speed 3. The whipping time is not exact, if we need more time we program it in short times of 30 seconds until we can beat the cream without turning to butter.
We separate the cream and in the same glass without cleaning we prepare the chocolate mousse. We add the cheese together with the sugar and we program it 1 minute at speed 3,5.
We add the cocoa and the two tablespoons of milk and we program it again 30 seconds at speed 3,5. We clean the remains that have remained on the walls of the glass with the spatula.
Finally we add the whipped cream and program it 3 minutes at speed 3. It is possible that the cream has not been well mixed, we can make a small push with the spatula and program the mixing time a little more. We put the mousse aside and wash the glass.
For the chocolate ganache, add the cream and the covering chocolate to the glass. We program 2 minutes at 105 ° and a speed of 1,5.
We make the assembly of the cake. In a square tray we will start with the first layer. We spread a thin layer of chocolate mousse. This base will serve as support for the cookies, so they will not move when we place the mousse again. In this way we place the cookies in a row without leaving any free space.
In the second layer we distribute another layer of chocolate mousse. We spread a layer of chocolate ganache on top.
In the third layer we put another layer of cookies again, with another layer of chocolate mousse and another of ganache.
In the fourth layer we will finish with the layer of cookies and a layer of chocolate mousse. With what we have left over from ganache we can decorate the surface by drawing vertical and parallel lines. We put it in the refrigerator to rest for about 1 to 2 hours.
