Eggless sponge cake (with apple compote)

Here you have our proposal of cake for this weekend. The main feature is that it has no egg although it is possible that your guests do not even notice it ... because it is delicious.

Let's put it though applesauce, like the one we use in the light apple pie, do you remember? With our thermomix we will have it ready in about 20 minutes and also without added sugar!

Ingredients

For the mass:

• 125 g plain yogurt
• 115 g brown sugar (or white)
• 60 g of extra virgin olive oil
• 80 g applesauce (see recipe here)
• 130g milk
• 270 g of pastry flour
• 1 sachet of backing powder

To decorate:

• Icing sugar (optional)

Preparation

1. We turn on the oven at 180º.

2. We put all the ingredients of the dough in the glass except the flour and the yeast. We mix 30 seconds, speed 4.

3. Add in flour and yeast. We mix during 8 seconds, at speed 3.

4. We put it in our mold. I do it in a round mold, 22 or 24 centimeters.

5. When the oven has reached 180º we put the cake. It will be ready after 30 to 40 minutes, depending on the oven.

Notes

We can decorate it with icing sugar once it has cooled.[br][br]You will have another version of this cake if you mix slices of apple and/or walnuts in the dough. It is also possible to replace white flour with whole wheat flour.
