Ingredients

2 large aubergines
3 balls of mozzarella
600 gr of crushed tomato
100 gr of Parmesan cheese
Oregano
Some fresh basil leaves

3 beaten eggs

Preparation

Cut the aubergines into thin slices, add salt to them and let them rest in a colander. The salt will make the bitter taste of the eggplants go away. You will see how they "sweat" as the minutes go by.
While the aubergines rest, we are going to prepare the tomato sauce. We put the tomato, the 50 g of oil, salt, sugar, oregano and pepper in the glass. We program 20 minutes, varoma temperature, spoon speed. Add the chopped basil leaves and remove from the glass and reserve.
In a large frying pan or griddle with oil, we brown the aubergine.
