Mango salmorejo

I love making new versions of the gazpacho and the Club of Loja. Seeing the recipe published by Ana del watermelon salmorejo, I came up with this exotic adaptation using mango. And honestly, it was a success. The texture left by the mango and the sweetness that contrasts with the acidity of the tomato, is a truly spectacular combination.

I really encourage you to try it, although it may seem strange to you when you read it. At home we were really delighted. The flavor of the mango is hardly noticeable, but it is a salmorejo with a very special flavor.

    Mmmmm !! When you say crushed tomato, do you mean canned tomato? Or a whole tomato and crush it ourselves?

      You can use the one you like the most, Rocío. If you opt for the canned one, you already have it crushed. If you prefer the natural one, crush it previously, washed, 5 seconds at speed 5. A hug!
