Mediterranean flavor stuffed tomatoes with rice garnish

Preparation

1. We cut the tomatoes as seen in the video. We empty them with a spoon and reserve the pulp. We put the tomatoes upside down on a plate covered with absorbent paper.

2. We put the Parmesan cheese and garlic in the glass. We program 8 seconds, speed 10. We lower with the spatula what has remained on the walls of the glass.

3. Add the tomato pulp, the breadcrumbs, the anchovies (drained, without the oil) and the olives. We program 30 seconds, speed 6.

4. We fill the tomatoes with this mixture, with the help of a spoon. We put the "lid" on each tomato. We place the stuffed tomatoes on a baking dish.

5. We pour a drizzle of extra virgin olive oil on each tomato.

6. Bake at 180º (preheated oven) for 35 or 40 minutes.

7. While the tomatoes are baking we can prepare a white rice as a garnish. To make the rice, we put the water, the salt, and the oil in the glass. We place the basket inside the glass and add the rice. We program 20 minutes, 100º, speed 4.

8. And we have everything ready to serve.
