Piedmontese risotto

Risotto alla piemontese recipe, Italian dish with intense flavor that you will learn to prepare with the Thermomix in a simple and fast way.

If you like the pate you will surely enjoy it. And if the livers are not your thing, you can substitute them for a little more minced meat, you will get a smoother risotto.

This type of dishes must be eaten fresh made so, think about what time you want to eat and, forty minutes before ... to cook!

Ingredients

  • 350 g of rice
  • 1 cebolla
  • 1 bit of celery
  • 1 Carrot
  • 50 g of bacon
  • 30 g of extra virgin olive oil
  • 150 g minced beef
  • 4 chicken livers
  • 100 g of red wine
  • 600 g of meat or vegetable broth
  • 3 tablespoons of tomato puree
  • 2 butter nuts
  • 2 tablespoons grated Parmesan cheese

Preparation

  1. We put the oil and the bacon in the glass. We program 2 minutes, 100º, speed 1. We add the celery, onion and carrot. We shred a few seconds at speed 5. We lower with the spatula what has remained on the walls of the glass and program 3 minutes, 100º, speed 2.

  2. We put the butterfly on the blades (if necessary we remove the sauce so that it fits well), we join the meat and the livers well clean of nerves, into pieces. Sauté programming 2 minutes, Varoma temperature, left turn, spoon speed.

  3. We add the wine and program 3 minutes, Varoma temperature, spoon speed -in this case, without putting the cup-.

  4. We add the tomato and 100 g of broth. We program 10 minutes, 100º, spoon speed, left turn.

  5. At the end of the time, add the rice and the rest of the broth (500g). We program 15 minutes, 100º, spoon speed, left turn.

  6. Pour into the serving dish, add the butter and Parmesan cheese.

  7. And ready to eat. We serve immediately.
