Chicken liver pate (chicken foie) with Thermomix

I was a great lover of liver until I could no longer close my eyes to the cruelty of its production (banned in 15 countries for animal abuse) and I gave up its consumption after watching a video that made me cry. Today I have found a great alternative for him: the chicken liver pate, an authentic delicacy with a taste very very similar to Duck Foie original.

To elaborate this chicken foie, I have based on a recipe from the Essential book, but with a couple of touches of my old foie recipe. I have accompanied it with blueberry jam, but I also recommend it with applesauce or as a substitute for foie in any recipe that incorporates it, such as risotto of foie and mushrooms.

    I made this pate using the must-have recipe. It was one of my first recipes with the thermo. He did not finish convincing me. The texture is unbeatable but it tastes too much of butter and white wine. In the end I am left with my usual recipe, which has had so many successes, yes, I will try to adapt it to make in thermomix, much more comfortable, of course.

        Hello Ana! I find it as a great idea! So you can help me adapt it to tmx. I'll tell you how I do it with a frying pan and a blender, yes, I can't tell you the exact times or amounts, since it is one of these recipes that you don't have already written down, which are made so often that they come out alone. I use an onion if it is very big or two if they are small, 6 slices of bacon, two packages of liver from mercadona very clean of nerves and other hard things and a good jet of port (also serves a px). I poach the onion in the pan, then add the bacon and finally the livers.

      About 4/5 days in the fridge. You can extend the shelf life if you store it in airtight jars, which you will fill to the brim, putting melted butter on top. You close the jar and put it upside down in the fridge. So it will last you about 15 days

          If my experience helps you, I can tell you that I make a very similar recipe, which has a little more chicken and livers, and I leave them for 15 minutes.

          The time can also vary depending on the size of the pieces. If you see that with 8 minutes they are not done, you can extend the time without any problem.
