Cucumber and melon cream

Refreshing melon and cucumber cold cream, seasoned with mint and yogurt, ideal as a starter for the hottest days. Ready in less than 2 minutes.

Ingredients

  • 300 g of cucumber with soft skin (if the skin is hard, we peel it)
  • 300 g of melon without skin or seeds
  • 50 g sweet chives
  • 1 teaspoon of salt
  • 2 unsweetened Greek yogurts
  • 1 pinch of sugar
  • Juice of 1 lemon
  • 50 g of extra virgin olive oil
  • 10 fresh mint or spearmint leaves

Preparation

  1. We put all the ingredients in the glass and program 15 seconds, speed 5. After 1 minute, progressive speed 5-7-10.

    It is very good, but the cucumber eats the flavor of the melon. Next time I'll miss a lot of cucumber.

      Hi Diego, I'm glad you liked it. When I made it, it didn't give me that feeling, I think it depends on the type of melon and cucumbers you use. That is, in my case the melon was somewhat ripe, so it had a lot of flavor and sweetness, but of course, it is best to adapt it to the tastes of each one. Thanks for writing to us!

      Hello Toqui, you can substitute the yogurts for the same amount of cream and a splash of lemon. Yogurt adds creaminess and acidity. You'll tell me how it looks on you! Thanks for following us 😉
