Strawberry gazpacho

This gazpacho We did it in one of the conferences of the Yela Gastronomic Society and the truth is that its “demanding” diners liked it.

It does not have a single tomato and its flavor is surprising ... Now that we are still in season strawberries and that it is already warm is an ideal starter.

You can accompany it with a Parmesan cheese gratin, with some sliced ​​strawberries and, of course, with the gazpacho pieces of a lifetime: pieces of cucumber, pepper ...

Original and delicious strawberry gazpacho accompanied with a crunchy sheet of Parmesan cheese, ideal as a starter or aperitif in strawberry season.

Strawberry gazpacho

Ingredients

  • 300 g of ripe strawberries and, if we want, some more to decorate
  • 20 g of spring onion
  • 15 g cucumber, peeled
  • 15 g of red pepper
  • 280 g of water (you can put more or less according to your preferences –gaspacho more liquid or thicker-)
  • 25 g of extra virgin olive oil
  • 30 g bread crumbs
  • 1 clove of garlic (optional). If you put it, I advise you to scald it before 1 minute in boiling water.
  • 15 g brown sugar
  • 1 tablespoon of sherry vinegar
  • 1 pinch of salt
  • 30 g of grated Parmesan cheese to decorate

Preparation

  1. We grate 30 g of Parmesan cheese with closed glass and several turbo strokes. We put the grated cheese on a tray covered with greaseproof paper and bake at 180º until golden.

  2. Scald the garlic: put 1/2 liter of water in the glass and program 5:30 minutes, 100º, left turn, spoon speed. When it remains 1:30 minutes (the water will already be boiling) add the garlic through the jar.

  3. At the end of the time, we take out the garlic clove and reserve. We pour the hot water and cool the Thermomix® glass with water.

  4. Soak the bread crumbs with the tablespoon of vinegar.

  5. We wash the strawberries and remove the leaves. We put them in the glass and add the chives, cucumber, pepper, water, oil, breadcrumbs, blanched garlic, sugar and salt.

  6. We shred 40 seconds, progressive speed 5-10

  7. The crushed with Thermomix® is quite fine but if you prefer you can strain it although it will come out less.

  8. We put it in the refrigerator if we want to drink it very cold. Once served (I recommend that it be in small glasses) we decorate with gratin Parmesan cheese, and if we want, with a piece of strawberry.

Notes

We can put aside a few pieces of cucumber, pepper and chives so that each one can be served as desired.

      Great, because we will try the beet one, it will also be great!
      I hope you like the strawberry one as much as we do. By the way, when doing so it weighs the quantities very well because if we go over with the chives or cucumbers, for example, the strawberry flavor is too hidden.
