As many of you know, although I live in the mountains of Madrid, I grew up in Pozuelo de Alarcón, a town that I have a lot of affection for and sometimes longed for. For example, it reminds me of very special moments that I lived there. When I was a child, I would come back from school on the road and stop at the town hall square. My mother or my grandparents were always waiting there, who received me with special affection and always invited me to picnic at Señor Pedro's pastry shop, which was on the corner. And with this, you can already get an idea of what my favorite bun... well yes, a great "Bamba de Nata", which made me go licking my lips until I got home !!
I don't know if it happened to you but I have small flavors that I have never found again. I have tried other sneakers but they never gave the touch of the ones they made in my town and more than one Pozuelero will agree with me.
I want to dedicate this recipe to my mother, on her birthday. For all those times that together we have enjoyed this delicious bun. You will even remember Mom, the scare I gave you taking one in Benidorm, the intoxication it gave me because the born in the heat of August it must have been bad. But even so I still love them and whenever I take them they come to mind !!

Of course take the one you want they are to take and repeat, heh, heh ... Greetings
Hi Silvia, could you tell me where I could buy the orange blossom water? I don't even know what it is, thank you?
Orange blossom water can be found in the pharmacy, a bottle is very good and you will drink it.
I already realized in the comments where I can buy it, thanks
Hello Silvia, I share your experience. I lived in the town hall square and I remember those sneakers and the pastry shop. I miss it. I imagine how you… .a greeting
Thank you for your comment Encarna! 🙂
I like these sneakers, my husband has always liked them.
Congratulations to your mommy.
Kisses.
They are very good, do them to your husband and you will tell me what they look like. A kiss
I want to ask you two questions:
Where to get orange blossom water? Y
If I want to make fewer sneakers. Do I have to reduce the times that the recipe proposes? or how should I do it?
Thank you very much.
Mar, orange blossom water, I find it in supermarkets such as carrefour, alcampo, hipercor ... but more for Christmas to make the roscón de reyes, which also carries it but now you can buy it in pharmacies but you must specify that you need it to food use.
You can reduce the number of sneakers but the times you must continue to respect them.
All the best
Thank you very much Silvia.
I will make them and possibly fill them with foie gras, they can also be very good with roquefort lowered with cream.
Kind regards.
Mother of God
This weekend they fall, how many memories do they bring me?
congratulations on the web
One question, do you put skimmed milk, whole or semi?
I generally use whole milk for these desserts.
Hello, congratulations to your mother. I want to ask you, are the sneakers from Laredo, thank you ………………
Not the sneakers are a bun that is eaten sweet with cream, truffle or pastry cream and the lionesses are made with Choux pastry and are eaten with sweet or salty.
Hello, I have seen your recipe for invert sugar, to make in the thermomix but I don't know where I can buy the white raising agent, nor the blue or purple raising agent. Could you tell me where I can buy it? Thank you very much and congratulations on your multiple recipes.
At Mercadona I buy it.
sorry I forgot to ask you with the thermomix 21 it is all the same and the sneakers are for dessert or snack thanks ……………… ..
Sandra, you can also make this recipe with the TM-21 without any problem and the bamba is a bun, which you can have as a snack, breakfast or dessert. I love it at any time, with how sweet I am. It resembles the roscón de reyes, you can eat it when you feel like it the most.
All the best
Very cool the presentation of the page, and how rich the sneakers look
Thanks Rosa, I'm glad you like them!
Hello!!!! Good grief, they look like a pastry shop, but one question ... are the sneakers what we call "Catalan sticks" here (in the Albacete area) and that they can also be filled with pastry cream or truffle? Thanks a lot!!!!
Caty I have never tried them, but I think that some other blog follower has commented that they are, and they can also be filled with what you say. If you try it, confirm if they are like this or not. All the best
BY GOD !!!!!!! when I have seen the recipe I have been stunned .... It is my favorite bun since I was a child and now although I should not, I indulge myself from time to time, thank you very much because for me and for me friend Emilia, this recipe is like a gift, I repeat myself… THANK YOU VERY MUCH. REGARDS
I am very happy that you were excited about this recipe. For me it is like a delight, eat one and go back to childhood.
All the best
Hello, first of all congratulations on your work which is really great, I would like to ask you for the recipe for the meringue millefeuille, that sweet 2-story so cloying that it drives me crazy. Thank you very much in advance
Mari Carmen, I don't have that recipe, but I will be encouraged to make it.
I have looked for you is. Hope this can help you. http://www.recetario.es/receitas/11013/milhojas-simples.html?page=1
Also as a good Madrilenian, sneakers take me back to my childhood, so I will try to make them. Greetings and always thanks.
I hope you like them!
Hello
In the recipe you put how to make the sneakers, but what about the cream?
Mirian, you are right but in several desserts that we have already published we discussed how to whip cream in the thermomix. I leave you a link and still I tell you how to do it.

http://www.thermorecetas.com/2010/11/05/Receta-Postres-Thermomix-Tarta-San-Marcos/
For the whipped cream:
- 400 gr. whipping cream 35% mg, very cold
- 1 tablespoon cream cheese
- 70 gr. icing sugar
The whipped cream: we make the icing sugar, pouring the sugar into the glass and pulverizing it for 20 seconds, at progressive speed 5-7-10. We reserve in a bowl.
We put the butterfly on the blades, we add the cream (it has to be very cold), the cheese and we mount it at speed 3,5, without time and looking through the mouth so that it does not go over and remains at its point. Add the icing sugar and mix with the spatula.
They are delicious. We can fill them with anything tasty and they become a delicacy.
Kisses,
I also love truffles and pastry cream.
I did not know the sneakers, it seems to me a very curious name. It reminds me of the Catalan stick. Congratulations on the recipe. A kiss
Try them, you will surely like them !!
When I was little, it was also one of the buns that I liked the most along with the croissants. Thank you for reminding me of them for a long time that I have not eaten them.
I will copy your recipe.
a little kiss
I'm glad you like it! try the recipe and you will tell me.
A little question, apart from filling them with cream, tell me how I can fill them with truffle, or chocolate or any rich, rich little thing, one of those that you do.
Thank you
Mª Carmen, to fill them with truffle you have to put these ingredients:
- 400 gr. very cold whipping cream 35% mg
- 1 tablespoon cream cheese
- 80 gr. of sugar
- 4 tablespoons of unsweetened pure cocoa
We prepare the truffle: we do the same as with the cream. First we make the icing sugar. We booked. We put the butterfly on the blades, we add the very cold cream, the cocoa, the cheese and we program at speed 3,5, without time. We look through the nozzle until we go that it is already mounted. Add the icing sugar and mix with the spatula, using enveloping movements.
And you can also fill it with pastry cream, like the one in the miguelitos recipe. http://www.thermorecetas.com/2011/03/13/Receta-Postres-Thermomix-Miguelitos-de-la-Roda/
I am going to write this recipe down to make it shortly, I am going to give my daughters a joy. Kisses
You sure give them a super joy. They come out great !!
The blog you have is phenomenal.
You are getting at least me to dust off the Th. Thanks a thousand for that.
By the way…. in which town of the sierra do you live….? Let's see if we are going to be neighbors and I without knowing it.
Thank you very much Joaquín, I am glad that we are useful to you and that you give use to the thermo. We live in Guadarrama.
For my mother, who is also a fan of sneakers, I make a note to make it as is and give it to her.
A kiss
Paco, he sure loves them, they come out great. Next time I also want to fill them with truffle and pastry cream. Make them and tell me. A kiss
a question when you fill them with cream and it is from the boat and how do you do if you fill them with truffle
A question how do you make the piles ??? with a pastry bag, or does the dough let you make piles ????
The dough lets you make piles like little balls.
I did not know your website, and now that I have bought the Thermomix, I am visiting my usual blogs, and those that use the tm31, and I have come across yours, and I am staying here to try some of your recipes.

Welcome, here we are to surprise you with new things, to see what you think! a greeting
Thank you very much for your speed, I have one more question if we don't add the orange blossom water, does something happen? Is it like vanilla sugar that is just for the aroma? So from Guadarrama, I am the one from the fair who was there every year with my parents, only they have retired this winter and my brother lives there.
Nothing happens if you don't add the water, it's aroma, but I love how it looks with orange blossom water. All the best
I just got to know the blog, and it makes my mouth water, what delicious things!
What size do you make the balls approximately?
regards
Hello, I already have the sneakers made and they are… .. great, I don't know if I have made them very small because I have 32 little sneakers…. It doesn't matter because they are a delicious snack next time I make them bigger and problem solved. regards
Great and delicious in flavor, although I would add 1 more tablespoon of orange blossom water to give it more flavor… .for the rest… delicious. regards
I have made the sneakers but they have not been too good they are as hard inside because it can be I followed all the steps but in something I had to fail I hope you answered me because the next day I could not eat them I had to throw them is a shame for that I would love for you to leave me
There is some step that escapes us that you did not do the same, you used the strength flour and fresh yeast, right? did you leave the rest times too? some of that could be.
If I use flour and leave the times the balls how long should they be before putting them in the oven maybe it was for that reason I don't know but they were very hard because the texture has to be like a cake I think and I stay like bread
The time is until they double the volume, and that depends on each kitchen the temperature it has, it can be an hour or more. They have to be tender like a Swiss.
Hello
I have made the sneakers great! but they immediately get hard the next day, although I put them in a plastic bag when they are cold and they are not so good, the same thing happens to the roscón de reyes, which is very similar to the dough.
Is there any trick to make them hold squishy for more than 1 day? Thank you.
Cristina, as I fill both things with cream, I usually put it in the refrigerator and I don't notice that they are hard but soft like the first day, the truth is that they are not there. Let's see if someone sees your comment and can tell us a trick.
Hi Silvia, this afternoon I have prepared the sneakers, I have set the oven to the temperature that you put in the recipe, but the truth is, I do not control the height much and they have burned a little below, to see if you can tell me to How high do you put it or maybe I'll have to lower the temperature a bit. Thank you so much
Ana, I put it at medium height but it still depends on each oven, some give more heat than others even if they are at the same temperature. Maybe you have to lower it a bit.
Hello
I've done the sneakers again and one thing happens to me, the taste of the dough, it tastes a lot like yeast, like wine, and it's a shame ... it happens to me with pizza dough, roscón de reyes ... dough for empanadas , etc.
I use baker's pressed yeast and also that of the mercadona, but it tastes the same ...
I let the dough rest longer than they ask me, if it has to be 1 hour, I leave it for 2 and 3 hours….! Can affect? I thought that the longer you rest the better ...
In the end I asked the baker
The problem is not in the yeast, but in the time it is allowed to stand. Never let it rest for more than half an hour, as the dough becomes vinegary, and never add more yeast than the recipe says.
Greetings.
Very good and that I did not have orange blossom water, but they have come out of a scandal. It had been years since I had eaten a bamba of cream. Congratulations on the recipe and thanks for the web.
All the best
Gem
If you can help me, I have a question with the flours, there are many recipes that do not specify what flour it is and I do not know if it is necessary to put pastry or strength, especially I speak in the preparation of pastries, what difference is there of one to another, because in sneakers with cream you put strength, however in the cream snacks you have to put it as a pastry, I make a lot of trouble.
I hope you can help me.
Hi, I made the recipe, but I don't know why they came out hard and in the photo it gives the impression that they are soft. thank you I wait for an answer
Hola!
Yes, they are very soft ... I think what has happened is that they have been baked too much. Next time, leave them in the oven for less time (maybe 7-10 minutes is enough).
Tell us how about you do them again, okay?
Kisses!
