Carrot and almond cake

This carrot and almond cake is probably the one I like the most. At home they think the same and I think they love it for its natural texture and flavor.

I had always resisted doing it because I thought that using vegetables in the cakes would not look good ... Wrong! In fact vegetables add juiciness naturally and cakes are spectacular.

In fact, some friends tried it without knowing what it was from and they told me it was great, they also repeated and when I told them it was from carrots they were amazed. Since then I have been asked several times. It has become one of the favorites.

    I make this cake often with some variation, I don't use yogurt and I make a lemon icing as a topping. I am not quite enthusiastic about almonds, I do it with the same amount of hazelnuts and it is tremendously juicy, I encourage you to make this Carrot Cake, it is always a success!

    Another alternative is:

    CARROT CAKE

       Ingredients:

    -140g. Of flour.
    1 teaspoon of baking soda
    -1 teaspoon of cinnamon
    -2 eggs
    -125 g. carrots
    140 g. of Apple
    5 peeled and chopped walnuts
    60 g. raisin
     

    I have substituted the cinnamon and I have added pine nuts because I did not have nuts.
