Thermomix dessert recipe "Eggless" sponge cake

As many of you already know, I have a nursery school and every day more children present some kind of allergy or intolerance. I love making them a bun from time to time for parties or birthdays. This recipe was precisely given to me by a mother, in case I ever had a child with an allergy to eggs and wanted to prepare it so that everyone could eat it.

I had never prepared it until María R., a friend from the Facebook page "Thermomix Recipes" he asked me if I had any sponge cake without egg to bring the day of her child's birthday to the nursery, that there was a child with an intolerance to egg protein. I immediately remembered this recipe and I was bitten by how this cake would turn out. I did it that afternoon and we loved it!

It is made with orange juice and remains very juicy. It also has a most striking color.

I hope that thanks to this recipe children with egg allergy or intolerance enjoy a delicious homemade cake.

      Marta is a small plumcake, if you want a slightly larger bun double the quantities.

    I did it on Saturday and not even the crumbs were left. But it was a bit small. To make it bigger I can double the amounts and that's it, right?

    Hello, a question, I have to do it for about 30 children, what amounts do I use? I hardly ever use the thermomix and I am not very kitchens, but for my nephew I go to the kitchen to do whatever it takes.

      I think that for 30 children you will have to make 3 biscuits or 4 biscuits with these amounts. The thermomix does not have that much capacity 😉

    I tell you, yesterday I made this cake 2 times, the first time seeing that it did not turn inside, I gave it more time and it ended up toasting a bit, but it was not finished inside. I did it again without opening the oven at all and after 45 min. It was a bit better, but it's still a bit raw on the inside. Any recommendation? Thank you

      Pepe, is it a fan oven? It may also need a little more temperature, and put it on a slightly lower rack to make it so fast on top, it may be from the oven.
      I have been with my new oven for two years, it has a fan and I did not use it, I have tried and I do not get the point. And without a fan, I do not know what happens to me now, that it happens to me like you, they toast me but they do not finish making inside.
      Also another trick, which I use is the following, if it is already done on the outside and almost on the inside, that is, I skewer but it does not come out clean, but also not so stained. what I do is I turn off the oven, open a little bit and let it finish cooking in the oven with the heat it has caught, but carefully that it does not burn on the outside.

      Some of our recipes can be made with other flours that are not wheat. Today it is easier to find them (corn, chickpea, oatmeal ...). You can even do some of them with your Thermomix. But being able to use one or the other will depend on each recipe ... Do not hesitate to ask us if you want to adapt a specific one.
