Moroccan couscous with chicken

Hello! My name is Irene and from today I will begin to collaborate with great enthusiasm with Silvia in this new stage of Thermorecetas. Some of you already know me from my blog Taste Print, and you know that one of my hobbies is cooking, especially with my beloved Thermomix®, since they gave it to me I have not stopped using it and everything that remains!

Through a friend I got to know this page and since then it has always been one of my favorites. So I hope you like my recipes and that you learn with them as much as I have learned with Silvia and Elena and with the blogs of many of you.

Today I want to present you one of my favorite dishes: a delicious Moroccan couscous with chicken that you can adapt perfectly to the tastes of your family or diners. I learned it in cooking class Christmas special Thermomix®, and since then, I prepare it very often. Also, if like me you have to take the lunch at work, this is a perfect recipe because it looks great from one day to the next.

In the original recipe they used precooked couscous, but I'm going to leave you the couscous recipe that has always been made in my house and has a good touch of spices that makes it more authentic. As I said before, these spices can be adapt to your taste: from putting only salt to putting all those that you like.

      Hello Teresa, you can buy couscous in large stores. There are some that are already precooked and others are not. I particularly like the one that is not precooked. I buy the one from the Tria brand in Alcampo, but there are many brands.

      Anyway, in an Arabic specialty store you can also find a good couscous.

      Surely your recipes for couscous are delicious, but I think it cannot be called Moroccan couscous since they include wine and in the original recipe it has never been put since it is an Arabic dish and they do not They use alcoholic beverages or even wine.

      Hello Begoña,
      This recipe is designed to be made out of the thermomix because we serve the couscous separately from the sauce. You don't have to use a clay pot, you can use any container that you can heat (pot, pan…).

      The grains of couscous are so tiny that if we put them in the basket or in the varoma container it would slip through the holes.

      However, there is another way of preparing the couscous called taboule and that would be drunk dry (without sauce), which is like a salad.         Irene tell you that we have done it many times already, and we have succeeded each time. Everyone loves it. And my kids today sucked their fingers. They are small and I do not know to what extent so much spices are good for them, the cayenne is not used, it is too strong for them.       Thank you very much for your comment. You have to disguise the couscous for your partner, I'm sure if he tries it he will like it.
      You can get Ras-al-Hanout in Alcampo, so I imagine that it will also be in large stores (Carrefour, El Corte Inglés…). And if not, surely there is a spice store in your city. You will tell me!

      Hello Marilolas,

      In the preparation part I put all the spices to be added, so that's when you have to put the cinnamon and Ras-al-Hanout (in a pot you heat the oil, when it is hot you turn it off and then add the spices and you stir it well).

      The chorizo ​​pepper is bought dehydrated (dry) in large stores. You have to soak it in hot water for at least 30 minutes. Then, on a plate you open the pepper, remove the seeds and with a teaspoon you drag the pulp that is sticking to the skin (the skin must be discarded).

    2.-In the part of the couscous, when you say "we stir 2 times every 5 minutes", is it before or after having covered it?

      Hello Erika, I answer your questions:

      1- Minimum I would say 30 minutes, but the longer you leave it, the more flavor it will have. But if you are in a hurry, you can let it sit while you do the next 3 steps. The only thing is that it will have less flavor. So I think the best is 2 hours.

      2- We add the hot water and stir. Cover for 5 minutes. We open and stir. We cover again and wait 5 minutes. And again we open again, remove and cover. Ready to eat!!

    Hello again, thanks for the clarifications, now that I had everything clear I was going to get down to work but I can't find coriander or cumin anywhere ... where can I buy it?

    I've seen cumin ground or in a kind of twigs very similar to rosemary, is that it? or do I have to find it in grain like pepper?

      Hi Erika! Don't worry, ask everything you need, that's what we're here for.

      If you can't find the coriander, don't worry, you may not put it. In fact, I never use it because I don't like the taste of it. However, you can use cumin in powder, no problem. The one that says the recipe, they are like tiny and elongated granites, smaller than pepper. But, I already tell you, use it in powder, that nothing happens.

    the other day I made this recipe and I had some problems ...

    of flavor, it was incredible so I want to solve my doubts for when I repeat!

    It was very liquid and with too much sauce, I put four thighs as indica, so why could it happen?

    I also realized that in the step: «we add the water and the broth scoop» you have time and speed set but the temperature is lacking, is that why it did not evaporate me enough?

      Hello Rain! What a failure, it is true that I had not set the temperature, I am very sorry. I have already corrected it, it is 100º. Maybe that's why. Anyway, when a little bit goes by, it thickens, so you don't want it to be excessively thick either.

      When I do it, as there are only 2 of us at home, I like it over, so then we take it to work in the tupper and the sauce is fine.
