Today's dish is a great idea to present at your table with that original touch. We have compiled the classic wellington style recipe, but with pork tenderloin.
We will make this recipe in a traditional way, without Thermomix, where we will sauté some mushrooms and add them to the puff pastry together with the Iberian pate.
The sirloin will be wrapped in serrano ham, next to puff pastry and we will bake it to create this juicy and special dish. Try it and you will see how easy it is to do it.
Wellington-style pork tenderloin
This Wellington-style recipe is a classic, but with pork tenderloin. We will wrap it with sautéed mushrooms, Iberian pate, serrano ham and puff pastry. A delicious and juicy dish!

Ingredients
- 1 piece of sirloin
- 1 tub of Iberian pork pâté
- 200 g of mushrooms
- 1 garlic clove
- 1 premade puff pastry sheet
- 60 ml of aceite oliva
- Sal Island
- Ground black pepper
- 100 g of cured ham
- 1 beaten egg
Preparation
In a large frying pan add 30 ml of olive oil and let it heat up. Place the pork tenderloin, season it with salt and pepper and let it cool, browning all over its surface.
Clean and slice the mushrooms. In another frying pan add the 30 ml of olive oil and put it on the fire. Add the mushrooms, season with salt and pepper and let them brown.
When they start to brown add the finely chopped garlic and finish cooking everything together, stirring constantly.
Spread out the puff pastry sheet and cut several strips from the ends of the dough (they will serve to decorate the puff pastry). We spread it with the Iberian pate. We cover with the mushrooms and with the slices of serrano ham.

We place the sirloin in the middle and wrap it well, so that it is compact. We garnished on top with the strips of puff pastry that we had reserved. We spread the surface with beaten egg.

Prepare the oven, with heat up and down and 200 °. When it is hot we put the sirloin in the middle part and let it bake between 12-15 minutes or until we see that it is golden. Once done we serve hot. We can accompany you salad or with some vegetables.
