What at this time do you fancy a little snack of tortilla?

Although it may not seem like it, this omelette does not have potatoes, it is made with zucchini and the result is surprising. The recipe is based on one from the Infant Feeding book but it goes without saying that it is not only liked by children. To me, personally, it seems a delight.

In the preparation I explain something that you can also apply to the omelette traditional ... when you beat the eggs add a tablespoon of cheese spread (Philadelphia type). In this way it will be smoother and creamier.

      I put them with skin, so it has more vitamins, but in the original recipe it says that we peel them. You can do it as you prefer that it will be very safe.

    I have made the omelette and we just ate it. It is very good. It didn't have Philadelphia type cheese, so I took three portions of El Caserio type cheeses, and since they are denser than Philadelphia I added a splash of milk.
