If you want to make them even more special and with more flavor, you can put them on the surface or a fillet of anchovy or a slice of bacon. You will adapt them to your tastes.

Ingredients

2 eggplants
2 or 3 ripe tomatoes (about 180g of peeled tomato)
180 g of feta cheese
Some fresh chives
Some anchovy fillets or some slices of bacon for the surface (optional)

Preparation

We cut the aubergines in half and empty them with the help of a spoon. We put the meat in the glass and grind: 2 seconds, speed 5. We take out and reserve in a bowl.
We peel the tomatoes and put them in the glass. Again we grind with 2 seconds, speed 5. We put the tomato together with the meat of the eggplant.
We put the feta cheese in the glass and chop again during 2 seconds at speed 5. We incorporate it into the previous mix.
Mix everything with the help of the spatula. Add a little chopped chives (or the aromatic herb that you like the most) and salt if you see fit. We mix again.
Fill the four halves of aubergine and put an anchovy fillet on each of them.
Bake at 180º for approximately 20 minutes. We serve hot.

Notes

The bacon can be substituted for ham.
