Happy New Year!! Today is my first recipe of 2016, so I did not want to miss the opportunity to show you this delicious dish. It is perfect to prepare the night of january 5 or for the kings meal. Is light, but original, showy and full of flavor. I think it is perfect for these dates that we are already a little saturated with feasts and Christmas sweets.
We used halibut (also known as Halibut). It is a white fish from the North Atlantic that you will find already filleted in the fishmongers, ready to cook, without bones. Being a fish of considerable size, they usually sell it already thawed, so be careful with the salt because they usually put the fillets as a preservative. It has a very nice texture (similar to sole), so for children it is very interesting because it will appear that they are not eating fish. It is also very low in fat y rich in protein.
If you want to substitute the halibut, I recommend fillets of sole or rooster.
Bacon wrapped halibut
Delicious halibut marinated with olives and wrapped in crispy slices of bacon. A perfect meal to surprise our guests.
