Baked fish croquettes

baked-fish-croquettes

These fish cakes They are delicious. I have made them with a slice of salmon that I had leftover the other day and with canned tuna, but you can use the fish you prefer.

Since I discovered the Mamen croquettes I have not done others. The texture it is perfect and, what is the dough, it is prepared in a moment. So I have relied on your recipe to prepare them.

But this time I have substituted the frying pan for the oven, thus making them somewhat lighter. To coat I have followed the indications from Ana and I have used Corn Flakes. A delight, you will see.

How much milk and egg to coat?
    Thank you!

    1.    Ascen Jimenez said

      Hello Mercedes,
I usually put 1 beaten egg to which I add a splash of milk. I do it like this so as not to use more eggs for the batter and then pour over beaten egg ... But you have the option of putting two eggs or even just milk.
I hope you like them 😉

What a good idea to take advantage of leftovers!
How much corn flakes and how are they crushed?
    Thank you!!

      Hello, Martha,
How right you are! when there is something left over, making croquettes is the best option. They can also be frozen and they solve more than one dinner for you. Look at this link to see how it is shredded: http://www.thermorecetas.com/receta-basica-corn-flakes-para-rebozar/
Try grinding 150 g and don't wash the glass. If you see that you are missing, in a moment you can grind a little more.
You will tell me if you like them 😉
      A hug!

    Mmmm they seem very rich!
I'm a fan of your blog from Morocco
Please, can it be made with hake? Are they good? So I have to put 220g?
    Thank you

    1.    Ascen Jimenez said

      Hi Mounia,
Thanks for following us from there! With hake you can make them perfectly. With 220 g they will be phenomenal. If you do not plan to freeze them, you can also add two boiled and chopped eggs.
      A hug!

What a good looking !! When you say cooked salmon, do you mean grilled?

    1.    Ascen Jimenez said

You can do it grilled or whatever you like. I usually prepare it with salt, a little dill and a lemon wedge, I wrap it in greaseproof paper and bake it for a few minutes.

    They look great !!!
My daughter is looking forward to it;.)
Do you comment that they can be frozen, before or after baking?
    Thank you very much.

    1.    Ascen Jimenez said

Thanks Nani, you will see how delicious they are. I freeze them before baking, once I have shaped and breaded them. I put greaseproof paper on a tray, put them on top, one side by side, and put them like that in the freezer. The next day, once they are frozen, I put them in plastic bags. So then I can get the ones I need and they don't stick to each other.
I don't know if I have been able to explain myself well ... If you need any clarification, do not hesitate to ask me 😉
      A kiss!!

Good afternoon, I wanted to ask you a question, is not very little flour 125 between cornstarch and flour ?, I want to make the croquettes because I have salmon but I do not want to fight later to wrap them, thank you very much in advance.
By the way, I love your recipes and I always recommend your page.

    1.    Ascen Jimenez said

      Hi Yolanda,
Made like this, they look like the photo ... think that cornstarch is thicker than flour. At first it seems that the dough is too soft but then, when it cools, it becomes thick. If for safety you want to put a little more flour you can do it, they will also look good on you.
Thank you for following us, it is a luxury that you trust us.
      A hug!

Yes. It seems to me that there is a mistake in the recipe. 800 grams of milk and 125 grams of flour (between cornstarch and normal flour) and a smoothie comes out, not a dough.

        Hello Maria Jesus
Any night I make them for dinner and I check it 😉
        Thank you!

    Hello good day,
I wanted to ask two questions, can it be smoked salmon? And the second, are they equally rich in batter with the milk + egg mixture and then breadcrumbs?
    Thank you very much

    1.    Ascen Jimenez said

      Hello again!
Of course you can substitute it for smoked salmon but you will have to put less quantity because the flavor of this ingredient is much stronger.
You can coat them in the traditional way, they will also look good on you.
You will tell me how they turn out 😉
      A greeting!
