Banana cake without milk

We can say that it is a sponge cake "without". In addition to not containing milk, it also has no oil or butter. On the contrary, it is made with ripe bananas, the kind that sometimes acquire a too dark color in our fruit bowl.

It is true that it is not the juiciest sponge cake that I have tasted but I have to say that, not to take oil or butter, the result is quite good. If you want to add juiciness you can bathe it in a syrup like the one we used in the lemon cake.

This Banana cake It does not contain milk and does not contain oil or butter. We replace these last two ingredients with ripe bananas to obtain a lighter cake than traditional ones.

Ingredients

• 2 eggs
• 3 ripe bananas (2 for the dough and another to decorate the surface)
• 160 g of sugar and a little more for the surface
• 220 g flour
• 1 sachet of backing powder
• Cinnamon

Preparation

1. We put the eggs, the two bananas and the sugar in the glass. We program 3 minutes, speed 5.

2. Add the flour, yeast and a little ground cinnamon. We mix 10 seconds at speed 6.

3. If your mold needs it, we grease the mold. We put the mixture in it (mine is 23 centimeters in diameter, removable). We cut the remaining banana into slices and place it on the surface. Sprinkle sugar and cinnamon on the surface.

4. Bake in a preheated oven at 180º for approximately 30 minutes.

Notes

It will depend on the bananas and the flour used, but if when making the dough you see that it is too thick you can add a little milk, juice or even water.[br]You can use white sugar or brown sugar. In this case I have mixed them, 80g of brown sugar and 80g of white sugar.
