This is a recipe that has surprised me a lot. It was taught to me by my mother, who always likes to invent new things in the kitchen. Is very simple to do and you can leave your guests with their mouths open.

It is as simple as cooking some large beans or fabes and toast them in the pan with a spice mix. They are perfect to accompany meat or fish or as a simple snack. The bite is very pleasant because we have the crunchy skin toasted in the pan and covered with tasty spices and the smooth and creamy interior of a fabe. Delicious!

A surprising dish: beans roasted over the fire and seasoned with an exquisite mix of spices. Ideal to accompany meat and fish or as an aperitif.

Ingredients

To cook the beans

150 g of fat beans or fabes
2 liters of water
shawl

To season them

1 teaspoon ground cumin
1 teaspoon of curry
1 teaspoon ras-al-hanout (optional, Arabic spice, for example for cous cous)
1 teaspoon of turmeric
1 tablespoon honey
1 tablespoon dried or fresh mint
1 tablespoon vinegar or lemon juice
1 teaspoon of cinnamon powder
salt to taste
pepper to taste
70 g olive oil (we may need more)

Preparation

We put the 2 liters of salted water in the glass and put the beans in the basket. We program 60 minutes, varoma temperature, speed 1.
When the time is up, we check that the beans are to our liking and, if not, we program 10 more minutes at the same speed and temperature.
We drain the beans and discard the cooking water. Without washing the glass, we pass a kitchen paper to dry the glass and we continue with the next step.
We add all the ingredients of the seasoning except the olive oil. We mix 10 seconds, speed 4.
In a wide frying pan we add the oil. We have put 70 g but we may need to add more during cooking depending on how much the beans absorb.
We heat the oil and add the beans. We add the seasoning that we had in the glass and we stir well over medium heat for about 3 minutes so that all the beans are well impregnated.
Then we lower the heat, cover and cook for 10 minutes, stirring a couple of times.
Finally, we uncover and raise the heat so that they brown on the outside. Approximately 3-5 minutes or until you see them well toasted. It is important to stir very often in this step.

Notes

It is possible that some beans' skin may open during roasting in the pan, this is normal. [br][br]Since we are going to have the thermomix running at varoma temperature for 60 minutes, take the opportunity to cook something in the varoma container/tray and use it later. For example, hard-boiled eggs, steamed vegetables for a cream, chicken breast to make with mayonnaise...
