Today I want to tell you something interesting ... I want to tell you about a new food called bimi. Have you heard of him? A friend told me about it and I had never seen it, much less tasted it ... so the next day I was there looking for bimi in the greengrocers. And to my joy and surprise they sell it in almost all supermarkets, packaged and in the refrigerated vegetable area, so it is very easy to find !!

And now let's get to the important thing What the hell is bimi? As its producers say, it is a tender, natural and very tasty vegetable, it is a new variety that is the result of the natural cross between the broccoli y with Oriental. It resembles broccoli in its foil, but has a long, thin stem, with a flavor that reminds us asparagus green. It has a smooth, sweet and delicate flavor and, the best thing, we will not waste anything because it is taken whole, stem and foil. And even better, it has been recognized as a 'super vegetable' due to its high content of essential nutrients.

But what are the beneficial properties it has? As they inform us in their websites (I recommend you visit it if you want to delve into this topic), Bimi has ten essential nutrients. It has more zinc, folate, antioxidants, and vitamin C than green asparagus, traditional broccoli, kale, and spinach. In addition, it is rich in glucosinolates, an anticancer agent typical of brassicas. It contains sinigrin, which favors the elimination of precancerous cells. It is even believed that bimi may help prevent stomach, colon, and lung cancers.

So let's go there with our bimi recipe for today. We went to the simple, a cream that with our thermomix is ​​a luxurious texture. We reserve some florets to be grilled and give our cream a touch of crunch and color.

Very healthy cream made with the super vegetable bimi, a good dose of vitamins and nutrients for your body.

Ingredients

• 450 g of bimi
• 200 g of potato
• 50 g olive oil
• 100 g leek
• 2 cloves of garlic
• 600 g of water
• 170g milk
• 2 cheeses
• salt to taste
• pepper to taste
• A pinch of nutmeg

Preparation

1. We reserve some bouquets to grill and decorate our plate. You can also steam them in the varoma r taking advantage of the heat of the thermomix while we prepare the cream.

2. Add the oil to the glass and add the onion and garlic. We chop 4 seconds, at speed 4.. We lower the remains of the lid and walls and program 5 minutes, temperature 120º, spoon speed.

3. Add the rest of the ingredients (except milk and cheeses) and program 20 minutes, varoma temperature, speed 1.

4. After this time, we grind for 30 seconds, progressive speed 5-7-10.

5. We add the milk and the cheeses and program 2 minutes, temperature 90º, speed 3.

6. We serve the cream with the cooked or grilled broccoli bouquets
