Broccoli cream with basil aroma

Preparation

1. We pour the oil into the glass and add the leek cut into pieces. We shred 4 seconds, speed 4. We lower the remains of the walls and the lid and program 6 minutes, varoma, speed 1.

2. While the leek is being made, we wash the broccoli florets and peel and cut the potato into pieces. When the leek is finished, add the broccoli, the potato, the water, the tablespoon of meat broth and the pepper.

3. We program 20 minutes, varoma temperature, speed 1. When the time is up we stop the machine and remove the lid. We introduce the basil leaves and wait with the machine uncovered until the temperature drops to 80º.

4. We add the milk and the cheeses. We shred 1 minute, progressive speed 5-7-10.

5. As we will have cooled down a bit when adding the milk and the cheeses, we can program [b] r 1 minute, temperature 90º, speed 3 1/2.

7. To serve it, I garnished it with a drizzle of basil flavored oil and a little dried parsley. The oil is very easy to make: in an oil can we add 200 g of oil and 2 fresh basil leaves. Leave it for 2 days and it will have a rich basil flavor. When the 2 days have passed, you do not need to remove the leaves, you can leave them until you finish all the oil, so it will have more and more flavor.

8. And with this oil technique you can flavor it to your liking (chilli, rosemary, oregano, bay leaf ...) always with fresh herbs. And the same can be done with vinegar.
