Hi Angela, that's right, the new model (TM5) reaches 120 degrees. But that is no problem. If you use the previous model (TM31) you will be able to make all the recipes for the new model without any problem. Whenever you see a temperature higher than 100 degrees, put a varoma temperature in your machine and that's it. The 120 degrees are used to make the stir-fries and sauté the vegetables, for example, but with your model it is done just as well by putting varoma.
