After a busy Saturday and Sunday, we started the week with a easy recipe. Today I propose you some casseroles of eggs in sauce that, in addition, can serve as a recipe for exploitation.

I always advise you to cook more eggs necessary because they can be used for many other recipes. Also stored in the refrigerator without peeling they last perfectly for several days.

So with a little ketchup, boiled eggs and a few peas we will have a not inconsiderable dish. Serve with a few slices of freshly toasted bread for an even more rustic feel.

To make the eggs in sauce you can use your favorite tomato sauce recipe. I propose a new one with green pepper that we have already added to the recipe book to use it in other preparations.

Delicious eggs in tomato sauce based on natural ingredients. In addition, it is an excellent recipe to use and easy to prepare.

Ingredients

  • 4 boiled eggs (see recipe here)
  • 50 g onion
  • 2 cloves of garlic
  • 20 g olive oil
  • 100 g of green pepper
  • 500 g tomato (pear type)
  • 4 tablespoons frozen peas
  • 1 pinch of sugar
  • Salt and pepper
  • Oregano or parsley

Preparation

  1. We put the onion and the peeled garlic in the glass. We bite during 3 seconds, speed 3. Nothing happens if the pieces are big because in the end we are going to crush the sauce. We lower them towards the blades.

  2. Add the oil and fry for 6 minutes, 100º, speed 1. While we can take the opportunity to peel and drain the tomatoes well.

  3. We add them to the glass and add the sugar, salt and pepper. We program 25 minutes, varoma temperature, speed 2. Put the varoma on top with the peas and make sure that it is well closed.

  4. After 10 minutes, carefully remove the varoma and place the cup on its side so that the sauce gradually thickens.

  5. At the end of the time, we check that the tomato pieces have turned into a puree. If not, we can extend the cooking for another 5 minutes, at the same temperature and speed until they are well done.

  6. When they are ready, we crush the sauce for 30 seconds, speed 8. If you like the sauce to be finer you can put it at maximum speed. We rectify salt.

  7. In some casseroles or deep plates we place several tablespoons of tomato sauce, we put the eggs, peeled and cut into 4 pieces and a tablespoon of peas. We finish by sprinkling oregano or parsley.
