I had guests and wanted a appetizer of a creamy pate to fill some tartlets or to dip with rawness (raw vegetables cut into sticks) type dips. I looked at what I had in the fridge and the thing was not very abundant, but it did have stored aubergine garnish from the one we did a few days ago, I mixed it with cheese spread and ... voila, I got a mutabal exquisite that was a success.

I'll give you the recipe, if you like the eggplant, you will love it.

A creamy cheese and eggplant paté, ideal for filling tartlets or dipping crudités type dips.

Ingredients

75 g onion
1 tablespoon (dessert) of honey
150 g of aubergine
shawl
half a teaspoon ground cumin
25 ml oil
150 g cheese spread

Preparation

Peel and cut the onion into quarters and place it in the glass with 25 ml of oil. We chop during 10 seconds at speed 4.
Add the honey (do not add it through the mouth, which stays in the center, open the glass and let it fall around the blades or near the walls) and program 7 minutes, 100º, spoon speed, left turn.
Meanwhile, we wash and cut the aubergines into large pieces (it is not necessary to peel them), sprinkle them with salt and immerse them in a container with cold water for 5 minutes.
We remove the aubergines and let them drain on a colander.
When the onion time is over, we put the aubergine in the glass and chop for 10 seconds at speed 4.
We add a teaspoon (of the coffee ones) of salt, half a teaspoon of ground cumin. We program 10 minutes, 100º, spoon speed, left turn. With beaker.
We remove the beaker and program 2 more minutes, 100º, spoon speed, left turn.
We lower the remains of the walls of the glass towards the blades. Add the spread cheese and crush during 30 seconds at progressive speed 7/10.
We lower the remains of the walls of the glass again towards the blades and we crush again during 15 seconds at progressive speed 7/10.
Let cool before serving.
