What do you think of this cheesecake to start the week off right?
We have not had birthdays at home or anything like that ... but we have had a plum tree in the garden that is full of plums, and we have to start producing so much fruit! In this case I have made a plum jam that, mixed with walnuts, decorates and gives flavor to this delicious cake.
The filling carries ricotta cheese, cream, yoghurt, milk, eggs ... And the base, muffins and butter. With ingredients like that, it's hard not to like it, right?
Both the base and the filling are baked. Once cooked is when we decorate with our jam. Don't you have plum jam? Well, no problem, you can replace it with the one you have at home or the one you like the most.

With Burgos cheese it will be just as good. I have put ricotta because here it can be found in any supermarket but I do not know if in Spain it will be easy to locate ... But what has been said, you can substitute it for Burgos without problem.

About the cheese, I have not tried it but I imagine that mixing the two cheese will also suit you.
As for the butter ... try a bit of spread cheese, see how it goes. I can think of other things but they are no healthier than butter ... If not, you can choose not to base it.

One question, can the nuts be put in the mixture? So that there are pieces inside the cake? Or would they all stay down?

I have not tried to put the walnuts in the filling but they may, as you say, fall to the bottom. If you decide to do it, you can take the test - the worst that can happen is that it falls to the bottom but nothing would happen either.
About the diet… nothing happens to try a little!
