If not, cold, which is also very good, accompanied by a coffee, a horchata or your favorite drink. 

You have almonds (without peeling, to give us more benefits) and cane sugar. In addition, thanks to our kitchen robot, it is very easy to do. Give it a try because I'm sure you're going to love it.

Good both hot and cold, easy to make and with simple ingredients. Take advantage of the cherry season by preparing this cake because it is a delight.

Ingredients

  • 100 g almonds
  • 150 g of cane sugar
  • The skin of 1 lemon (only the yellow part)
  • 3 eggs
  • 40 g of extra virgin olive oil
  • 10 g kirsch (cherry liqueur)
  • 100 g flour
  • 8 g Royal type baking yeast
  • 500 g cherries

Preparation

  1. We put the almonds in the glass and pulverize them by programming 10 seconds, speed 7. We take out and reserve.

  2. We put the sugar and the lemon peel in the glass. We program 12 seconds, speed 7.

  3. We add the eggs and program 3 minutes, speed 5.

  4. Add the oil, almonds and liquor. We program 40 seconds, speed 5.

  5. We now add the flour and the yeast. We program 8 seconds, speed 6.

  6. We put the dough in a removable mold 22 centimeters in diameter. We place the cherries on top, pitted and in halves (we introduce some in the dough so that they remain inside the cake).

  7. Bake at 180º (preheated oven) for approximately 40 minutes.

Notes

It can be eaten hot, fresh from the oven, with vanilla or cream ice cream.[br]Otherwise, once cold, it should be kept in the refrigerator. Cold it is also delicious.

    I have done it and since it did not have cherry liquor I have put Disarondo, (almond liquor), and it is scandal!
