Always facilitating that my children coman vegetables, I invented a few days ago these chicken nuggets with carrots, reinterpreting our recipe for traditional nuggets, but changing the ingredients a bit. I have added a soft cheese, type tronchón, and some carrots and they have given me an excellent result. We have loved the whole family. I accompanied them with a vegetable stew, which can be made with fresh vegetables, following this recipe.

They can be fried in olive oil or baked reducing the caloric intake. I indicate both options in the file.

Traditional chicken nuggets, with carrots and soft cheese.

Ingredients

  • 2 chicken breasts
  • 100 g whole milk
  • 2 portion cheeses (can be substituted for 50 g of cream cheese, type of spread)
  • 60 g of soft cheese, Manchego or tronchón type
  • Carrots 2
  • 2 slices of sliced ​​bread
  • 2 eggs
  • bread crumbs
  • shawl
  • oil for frying

Preparation

  1. Put the chicken breast cut into large pieces and the carrot, peeled and also chopped, into the glass. We add a teaspoon of salt. We shred 5 seconds at speed 7.

  2. We add the bread in pieces, the cheeses and the milk. We shred 10 seconds at speed 7.

  3. We beat the eggs in a deep dish and reserve them.

  4. We fill another plate with breadcrumbs

  5. With our hands, we form balls with the dough and squash them a little with the palm to shape the nuggets.

  6. We batter them, first with breadcrumbs, then with beaten egg and again with breadcrumbs.

  7. We fry in abundant olive oil.

  8. If we prefer to bake them, we preheat the oven to 200º, grease a tray, place them on it and brush them with a little olive oil. We introduce the tray in an intermediate position until golden brown (between 10 and 20 minutes, depending on the oven).
