The raxus is a Galician traditional dish. Specifically, it is the fresh pork loin, cut into cubes, marinated and cooked in the pan. Like most traditional dishes, it is very simple to make and is usually served with French fries and Padrón peppers.

Our version is made with chicken meat that is lighter than that of pork, which allows us to be able to consume it, without problems, in a balanced diet.

Do you want to know more about chicken raxo in airfryer?

For this recipe you can use both breast and thigh. I personally like the thigh because it is juicier that the brisket

The secret of this recipe is in the dressing, so do not forget to add salt and pepper so that it has the right taste.

You can use both sweet paprika as spicy, which will give it a very special touch.

The wine and oil will help the meat fibers take flavor and you have a simple but very rich dish left.

You can freeze meat both raw and once cooked. Personally, I prefer to freeze it raw and with the marinade because cooking it is very simple and that way I have a freshly made dish without any effort.

The marinade can hold in the fridge Up to 3 days but the longer the time passes, the more flavor the garlic will give, so be careful.

My airfryer is one of the small ones, so I have to make 2 batches to cook the meat, but if you air fryer is big you can put all the meat together.
