Chilindrón chicken

Chilindrón chicken is a rich and easy recipe, one of those that reminds us of our grandmothers' kitchen.

To make the recipe you can use 1 kilo of chicken in large pieces or 6 thighs, which more or less weigh the same. The thighs crumble a bit and we love that because the chicken meat is mixed with the mushrooms forming a delicious sauce.

If you want them to be whole you have to stand them in the glass bone down and thigh up.

The sauce has a delicious flavor from the peppers and mushrooms. Accompanied by french fries it is a excellent dish.

      When cooking with wine, the goblet is removed when times are short, for example when you have to evaporate the alcohol in 2 minutes. But in this recipe you don't need it because the wine takes 10 minutes to evaporate. Anyway if you want to remove it, there is no problem.

      And about the butterfly ... if you want you can put it but in this recipe chicken thighs are used and you wouldn't need it. Another option is to use the knife guard.
