I wanted so much to make this cake… ever since I saw it in a book I loved it and I kept it in my head remembering it every month and I never found the time to prepare it. But finally a meal was presented to me and I said, I'll bring dessert! So I got down to work ... and the first thing was, what are the marshmallows? I understood that it was a plant ... but they were also clouds !! ¡¡candy clouds!! And I said, won't a cake with clouds be too cloying? Well, no, it was super tasty, nothing heavy (and I tell you that I'm not sweet at all).

And this was my first experience with clouds in baking and I have to admit that it is a bit cumbersome to work with them... don't be scared if when you are melting and mixing them they create a dense and sticky mass that seems inedible! I assure you that when you mix it with the egg whites, as if by magic, they will become manageable xD And I tell you this because this is what my friends at school told me. Thermorecetas, which I wrote to them running to ask if that dense and sticky texture was normal or if I had done something wrong. And they told me the same thing “don't worry, when you mix it with the egg whites it will become manageable” and they were absolutely right, thanks for the help girls!!

Surprising and colorful chocolate fondant cake with marshmallow topping, ideal for a dessert or a snack!

Ingredients

BISCUIT:

  • 85 g unsalted butter at room temperature
  • a little margarine to spread the mold
  • 225 g of sugar
  • 1/2 teaspoon of vanilla essence
  • 2 eggs
  • 85 g of dark chocolate fondant
  • 150 g of cream
  • 175 g flour
  • 1 teaspoon baking powder
  • a pinch of salt

ROOF:

  • 175g white marshmallow candies (marshmallows / marshmallows)
  • 1 teaspoon of milk
  • Egg whites 2
  • a pinch of salt
  • 2 teaspoons of sugar
  • 55 g of grated chocolate to decorate

Preparation

  1. We grease a mold with oil or butter of about 26-28 cm.

  2. In the glass we put the butterfly, the sugar and the eggs and we program 2 minutes, temperature 37º, speed 2 1/2.

  3. We schedule now 2 minutes, temperature 37º, speed 2 1/2 and we are adding the eggs one by one through the mouth. We remove the mixture and reserve.

  4. Without washing the glass, we place the butterfly again, add the chocolate and cream and program 6 minutes, temperature 80º, speed 1. We withdraw and reserve.

  5. We place the butterfly again, we put the sugar mixture in the glass and without time we program speed 2 1/2 and we add the chocolate mixture and then the flour, the salt and the yeast.

  6. We put the cake in the mold and with the preheated oven, we bake 40-50 minutes, at 175º.

  7. With the clean glass we add the milk and the marshmallows and we program 4 minutes, temperature 100º, speed 0,5. We check that when the time is up the sweets have dissolved, if not, we program a few more seconds at the same temperature and speed.

  8. Remove from the glass and let the mixture temper while we mount the whites.

  9. We clean the glass very well and dry it perfectly. We mount the whites with the help of the butterfly to the point of snow. To do this, we put the egg whites, the sugar and a pinch of salt in the glass. We program 2 minutes at speed 3 1/2.

  10. With a spatula and with great care we mix the marshmallow sweets with the whites that we have just assembled with enveloping movements. At first it seems that it will be impossible to mix because the marshmallows have become very "chewy", but as they absorb the whites they become manageable. We let the mixture rest for 10 minutes.

  11. When the cake is cold we cover it with the marshmallow cream and then sprinkle it with the grated chocolate to decorate.

  12. We keep in the fridge until the moment we consume it.
