The other day I dusted off my magazines "Christmas special" and I came across a recipe that, until now, had gone totally unnoticed.

I liked it because the main ingredient is thistle. A very typical ingredient of these dates. And that combined with the garlic bechamel is a very Christmas first course.

For this recipe you can use thistle leaves in boat or natural. If they are natural, they will have to be cooked in the Varoma for approximately 30 minutes.

I have used pot leaves and they have come out tender and rich. When buying, don't skimp and choose good quality ones, even so the recipe is very economical!

Thistle is a fantastic ingredient for our Christmas recipes because it is so inexpensive.

Ingredients

  • 400 g of thistle leaves (by boat)
  • 50 g flour
  • 260g milk
  • 25 g oil
  • 80 g of vegetable broth
  • 2 cloves of garlic
  • Salt and pepper

Preparation

  1. Put the leaves in the basket, pass them through tap water and let them drain.

  2. Chop the garlic, for them to program 5 seconds, speed 5 and pour the garlic through the mouth. Open the glass and lower all the pieces towards the blades.

  3. Add the oil and fry them for 3 minutes, Varoma temperature, speed 2.

  4. After time add the flour and program again 4 minutes, Varoma temperature, speed 2.

  5. Add the milk and the broth, season with salt and pepper and program 11 minutes, 100º, speed 4.

  6. Place the leaves on a tray and pour the mixture over them. Grate a little nutmeg or mace on top. Gratin in the oven or microwave for a few minutes.

  7. Serve right away.
