The time has finally come!! Here we have the winning recipe from the First Contest Thermorecetas which on this occasion we dedicate to oranges. The author of this magnificent recipe is Eva Monteagudo. Congratulations and congratulations because the recipe is great. 

This is what Eva told us:

Before telling the recipe in detail, I would like to share with all of you why I came up with this dish (which by the way is the first time I have made it). Cod is a fish that I love, but most recipes with this ingredient tend to be heavy and I thought why not lighten the flavor with a classic sauce? Well yes, the usual mayonnaise with a different touch, that of orange. And why give up the flavor of pil pil ?, Well we will not give up but we add it to the potato. The result, a recipe with classic ingredients that is softened by the pleasant orange flavor.

Well, let's get to work, I'll tell you in detail and I hope you dare to prepare it.

Tasty cod made in varoma and covered with mayonnaise with a touch of orange and accompanied with an original pil pil of potatoes. Ideal as a main course.

Ingredients

For the cod:

  • 2 desalted cod fillets
  • 1000 g of water
  • 1 pinch of grated cheese

For the mayonnaise:

  • 100 g olive oil
  • 100 g of sunflower oil
  • 1 orange
  • 1 egg
  • Sal Island
  • Vinegar

For the potato pilpil:

  • 2 medium potatoes
  • 2 cloves of garlic
  • 50 g oil
  • 1 orange

Preparation

  1. The first thing we have to do is prepare our Thermomix with the Varoma container, and put the two cod fillets on top. In the glass previously we have put the 1.000 g of water, we close, we put the varoma container. We program 15 minutes, varoma temperature, speed 2.

  2. We remove the loins and salt them (carefully).

  3. We take advantage of the temperature, and without removing the container we put the whole potatoes, programming 20 minutes, varoma temperature, speed 2.

  4. Once cooked, in a bowl and with a fork, we chop them without crushing them.

  5. We remove the varoma, and in the clean glass, we put the two garlic cloves and crush 40 seconds, speed 5-10. With the spatula we lower the remains of the walls and the lid and add the 50 g of olive oil little by little, pouring it into the lid (it will only fall through the jar) and mix in speed 5, for 7 minutes approximately (or until you see that it is ready). We remove and add to the potatoes.

  6. Finally the mayonnaise sauce with a touch of orange. We put a jug on top of the thermomix lid, press the scale function and weigh the oil: 100 g of olive and 100 g of sunflower. We withdraw and reserve.

  7. We put the eggs, vinegar and salt in the glass. We program 1 minute and 30 seconds, temperature 80º, speed 5. At the end of the time, we reschedule immediately speed 5, without programming time or temperature, We pour the oil, little by little, on the lid, without removing the beaker. We stop the machine when we have incorporated all the oil.

  8. We lower the remains of the walls and the lid with the spatula, and we add the juice of an orange (it is the touch of this dish) and we mix again 10 seconds, speed 3.

  9. To assemble the dish, put the mayonnaise on the cod and a pinch of grated cheese.

  10. For the garnish: Peel an orange and cut into slices. Put a thin layer of orange, the potato pil pil on a round mold and close the mold with another orange slice. To decorate, two fresh mint leaves

  11. Put in the oven or microwave to gratin until golden brown.

    First of all congratulations my question is the cod can be of any type or some in particular I mean frozen salty etc.

      Hi Charo, the cod are desalted cod loins. There you choose if you buy them already frozen at the right point of salt (I buy them at Mercadona and they are very practical) or you desalt them at home. Lucky!
