Potatoes with cod and mushrooms

Today we propose a fish dish, specifically from cod with potatoes and mushrooms. 

You can buy the cod already desalted or carry out this process at home. If you opt for the latter, 72 hours in advance you will have to start desalinate it. I change the water twice a day, once in the morning and once at night, during those three days prior to preparing the dish. But I know that everyone has their preferences in terms of times and water changes… You can tell us about them in the comments.

The funny thing about this recipe is that we will use the Varama container and its tray to steam both fish and potatoes. Meanwhile, we will prepare the broth with the mushrooms, in the glass. We hope you like the result.

Ingredients

  • 50 g of extra virgin olive oil and a little more to spread the varoma
  • 370 g of potato, peeled and cut into small pieces
  • 400 g desalted cod, cut into pieces
  • A few fresh parsley leaves (or half a teaspoon of dried parsley)
  • 30 g of bread
  • 1 garlic clove
  • 350 g of mushrooms, cleaned and halved, although that will depend on the size
  • 60 g of white wine
  • 250 g of vegetable broth

Preparation

  1. We spread the container and the varoma tray with a little oil. We put the potato in the container, in small pieces (in 1 centimeter cubes or even in thin slices). We place in the varoma tray in cod. We put the lid and reserve.

  2. We put the parsley and the bread in the glass. We program 10 seconds, speed 8. We take out and reserve.

  3. We now put the peeled garlic clove in the glass. We program 5 seconds, speed 5. We lower with the spatula what has remained on the walls of the glass.

  4. Add the olive oil and program 3 minutes, 120º, spoon speed.

  5. Add the mushrooms and white wine. We program 5 minutes, 100º, left turn, speed 1.

  6. We now add the broth. We place the varoma in its position and program 25 minutes, varoma temperature, left turn, speed 2.

  7. We check that the potato is cooked. If it is not, we remove the tray with the fish, put the lid back on and continue cooking: 5 minutes, varoma temperature, left turn, speed 2.

  8. In a casserole and in a source we put the potato, the fish and the mushrooms with the broth. 

  9. We serve by sprinkling on each plate, over the stew, the mixture of bread and parsley that we have prepared at the beginning.
