But how hot it is! So I thought you would like to have this Butter leek apple chill that is delicious and a fantastic summer recipe

It is a version of the classic Vichyssoise with a different touch. It has a very original because it combines the mild flavor of the leek and the sweet touch of the apple.

It is also very simple to do and you can do in advance to have it ready and to be able to take it at any time.

Ingredients

  • 2 large leeks, cut into pieces, just the white part
  • 1 apple and a half green
  • 25 g olive oil
  • 25 butter g
  • 400 g of water
  • 1 vegetable stock cube
  • 100 g of milk or cream
  • Chopped chives or colored pepper to garnish. You can also add ham cubes or make ham crisp in the microwave or oven.

Preparation

  1. We put the clean and chopped leeks in the glass. We bite them during 4 seconds, speed 5

  2. Add the peeled and quartered apples, the oil and the butter. We program 10 minutes, varoma temperature, speed 1.

  3. Pour into the glass 100 g of water, the stock cube and crush 1 minute, progressive speed 5-10.

  4. Add the remaining water (300g) and program 25 minutes, 100º, speed 1

  5. We add the milk and program 30 seconds, progressive speed 5-10.

  6. We let it cool down and store it in the fridge for at least a couple of hours to keep it fresh.

      Hi Claudia

      I leave you a link to wikipedia where you can see what leeks are.

      If you cannot find them in your country, you can substitute them for an onion that is sweet and soft.
