Cold cucumber and yogurt soup

The heat is here to stay, so let's release the summer season with a cold cucumber and yogurt soup.

It is clear that the best way to combat high temperatures is taking cold and light things. That is why I like this soup!

It does not have any complications in the preparation, it is very quick to prepare and also has very low calories. Ideal for people who take care of their body.

El cucumber that I have used is the so-called Dutch. It is long, smooth-skinned, and looks a lot like zucchini. Like the Spanish cucumber, it has no more than 15 calories, most of its composition is water and it only has 0.2 g of fat.

To decorate I have used some fried onion shavings. I saw them the other day at Mercadona and they seemed like the perfect accompaniment, since they add a point crunchy.

You will tell me your opinion.

      Hi Bea,

of course it can be made with Spanish cucumber but I have used Dutch because it is softer for me.

Thank you so much for the recipe.
I would like to know if the cucumber has to be peeled or if it is added with the skin.
    Thank you.

      Hello rosa,

I have removed some strips of skin but you can peel it whole if you want.

      kisses!

Hello. I have a question, can Greek yogurt be substituted for a natural one?

    1.    Mayra Fernandez Joglar said

      Hi Maite,

of course you can but be careful with sweetened natural yogurts that give a too sweet taste ... I tell you from experience!

      kisses!
