Cold peach cream

Last summer we were experimenting with the technique of loja baton to create delicious versions with melon, watermelon y mango. This year I have taken up the theme to go a little further with a cold peach and ginger cream made with peaches in syrup.

It's like a peach salmorejo, but since it has spices and ginger, I have not dared to give it that name. It is very rich and very cool. I recommend adding a few cubes of fresh cheese, tofu or bread.

This cold peach cream is delicious for summer lunches and dinners.

Ingredients

• 50 g of bread from the day before
• 1 garlic clove
• 150 ml cold water
• 1 teaspoon of salt
• 50 ml of aceite oliva
• 170 g of peaches in syrup (drained weight)
• 1 teaspoon garlic ginger paste or a 1 cm piece of peeled ginger root
• Half a teaspoon of turmeric
• ground black pepper to taste
• A little chives to decorate
• 100 g of fresh cheese, tofu or paneer

Preparation

1. We put the garlic, bread, water and salt in the glass. We crush during 1 minute at speed 4.

2. We program speed 4, no time and we are gradually pouring the olive oil on the lid, so that it falls by itself through the mouth.

3. Add the drained peach, ginger and turmeric and blend for 1 minute at progressive speed 7/10.

4. We taste and rectify salt

5. Serve cold sprinkled with chives, black pepper and a few cubes of fresh cheese, tofu or paneer.

Notes

The amounts are for two servings. If you need more quantity, you can increase the ingredients proportionally, maintaining times and speeds.
