Ayyyy the weather is already changing, it is already chilly at night and at home we wanted something warm for dinner. I wanted a carrot cream something different from the classic version so I made this one with a delicious touch of Red pepper.

It's super simple, you'll see. I have also added leek that gives it a very characteristic flavor and potato that helps give it consistency.

You can leave it prepared with in advance and heat it just to eat, accompanying it with some croutons.

Delicious carrot cream with red pepper, ideal for dinner and to ensure the vitamin supply of vegetables in the diet.

Ingredients

  • 50 gr of extra virgin olive oil
  • 4 medium carrots, peeled
  • 1 clean leek (only the white part)
  • 2 medium peeled potatoes
  • 100 gr of red pepper
  • 1 liter of vegetable broth (or water with a bouillon cube). For non-vegetarians, it can also be chicken broth.
  • Sal Island
  • Pepper
  • Nutmeg
  • 200 gr of milk
  • Juice of half a lemon

Preparation

  1. We put the carrots, the leek, the pepper and the potato in large pieces inside the glass. We add the oil and a pinch of salt. We program 10 minutes, varoma temperature, speed 1.

  2. Add the broth, pepper and nutmeg to taste and program 20 minutes, varoma temperature, spoon speed.

  3. We wait for the temperature of the glass to drop to about 70 ° and grind 1 minute, progressive speed 5-7-10.

  4. We add the milk and program 3 minutes, speed 3, temperature 90 °. Add the lemon juice and stir a few seconds at speed 3 no temperature. We rectify the point of salt and pepper.

  5. We serve and put the croutons on top.
