It is not your typical sponge cake. Carry cooked carrot and it does not "rise" like traditional cakes. But you will see, it is juicy and it is very tasty.

It has little sugar, but we are going to make up for it with side chocolate which, once cold, hardens.

Keep it in the refrigerator. When carrying carrots, it is not advisable to keep it at room temperature.

A different and easy to prepare sponge cake

Ingredients

  • 3 eggs
  • 150 g of sugar
  • 130 g of ricotta or cottage cheese
  • 50 g of extra virgin olive oil
  • 250 g flour
  • 2 teaspoons Royal type yeast
  • 200 g of cooked carrot
  • 150 g of chocolate

Preparation

  1. We grease a mold of about 28 centimeters in diameter.

  2. We put the eggs and sugar in the glass. We program 3 minutes, 37º, speed 4. We then reprogram 3 minutes, speed 4 (without temperature).

  3. Add the cooked carrot, in pieces, and also the ricotta. We program 40 seconds, speed 10. We lower with the spatula what has remained on the walls of the glass.

  4. We incorporate the oil and program 15 minutes, speed 5.

  5. Add in flour and yeast. We program 10 seconds, speed 4.

  6. We put the dough in the mold and bake at 180º for approximately 40 minutes.

  7. Once baked we let it cool.

  8. We chop it and spread the edges of each portion with melted chocolate.

Notes

To melt the chocolate we chop it and put it in a small bowl. We heat it for 1 minute in the microwave and mix it well, until everything is melted.
