We love making cookies as delicious as these. They are simple to make and look great, with their flower shape and an accompaniment of ganache and chocolate.
The technique for making cookies is very simple. We always like to do them if it can be in company and if it can be with children, much better. The idea is to make paired cookies so they have this great ganache filling.
The molds are easy to find in a bazaar and with our Thermomix it will let us make the dough and the chocolate with great ease. We already put the personal touch with the pieces of dried fruit.
Cookies stuffed with ganache
Some cookies with a delicious vanilla and almond flavor that you will love. Its final touch is accompanied by an easy-to-make ganache and a chocolate coating.

Ingredients
Cookies
- 220 g of wheat flour
- 90 g of sugar
- 30 g of almond flour
- 1 teaspoon of baking powder
- 120 g soft butter
- 1 teaspoon vanilla extract
- Yolks 2
- 1 handful of wheat flour for dusting
Ganache
- 90 g of dark chocolate for pastries
- 80 g whipping cream
Chocolate cover
- 110 g of dark chocolate for pastries
- 1 tablespoon of sunflower oil
- A handful of chopped walnuts or almonds
Preparation
In our Thermomix glass we add the 200 g of wheat flour, the 30 g of almond flour, the 90 g of sugar and the teaspoon of baking powder. We program 3 minutes at kneading speed.
We add the teaspoon of vanilla extract, the two eggs and the 120 g of soft butter. We mix it by programming 2 minutes at kneading speed.
On a surface we toss the handful of dusted flour and we toss the dough on top. We knead it with our hands and form a ball that we will wrap with plastic film. We put it in the refrigerator for 1 hour so that the dough hardens.
We can go making while the ganache. In our clean glass we add the 90 ml of whipping cream and the 80 g of chocolate. We schedule it during 2 minutes at 90 ° at speed 1,5. Ready and melted we will put it in a sleeve with a wide and curly nozzle and reserve. We can put it in the refrigerator so that the chocolate hardens while we finish making the cookies.
Once the cookie dough is resting time, we place it between two baking sheets and knead it. We will leave at most one centimeter of thickness, we lift the top paper and with a flower-shaped cookie cutter we are making the cookies. We are placing them on a tray that can be baked and we cook them at 180 ° for about 12 minutes or until we see that they have browned.
With the remaining dough we roll back into a ball and knead between the papers. We make the same cookies and in the middle we will make a central hole. We place it on a tray and we will bake it. As a detail it must be said that we will make the same amount of cookies with a hole as the same ones without it, since they have to be paired.
With the dough that we have left over, we knead again to make as many cookies as we are allowed, until the dough is exhausted.
In our Thermomix glass we add the 120 g of chocolate and put it to melt. We program 2 minutes at 90 ° at speed 1,5. Finished we put the chocolate in a glass wide enough to spread the cookies.
With the baked cookies, we will add a little ganache between them and join them. Spread up to half a cookie in the melted chocolate and place it on a tray to dry. On top we will add the pieces of walnut or almond. With the pastry bag that we had set aside, we put the ganache in the hole and decoratively.
We can put the cookies in the refrigerator so that before the chocolate solidifies and we will have our cookies ready to drink. They are delicious!
