Until now at home we had tried to do the Mayonnaise classic and also lactonese but a few days ago we tried something new that we really liked. It's about the coriander mayonnaise.

Its texture is exactly the same as classic mayonnaise although its flavor is different because it carries cumin, garlic and coriander. This blend of flavors will add a zing to vegetable, seafood, or even meat dishes.

You already know that coriander looks like parsley but with very different flavor nuances. For my taste it has some more refreshing final notes that are spectacular. It is widely used in international kitchen and its use is mandatory if you want to make a good ceviche.

So if you want to surprise your guests, in your next barbecue be sure to try the mayonnaise with coriander on some roasted potatoes or on some grilled prawns ... spectacular !!

Ingredients

  • 1 egg
  • 1 small garlic clove
  • 1 teaspoon (of the mocha) ground cumin
  • 10 coriander leaves
  • 1 dash of vinegar
  • 125 g olive oil
  • 125 g of sunflower oil
  • 1 pinch of salt

Preparation

  1. We put a container on the lid and press the balance button. We weigh the oils and reserve.

  2. We put the rest of the ingredients in the glass and crush during 1 minute, progressive speed 4-6-9. Next we make sure that the beaker is in place and we put speed 4, no time. We pour the oils on the lid that will slide to fall in the form of a thread, which makes it easier for the sauce to emulsify.

  3. When all the oil has fallen we stop the machine. This step will take us about 2 minutes or so. We open the lid and add salt if necessary.

  4. We can use this mayonnaise immediately or store it in a clean jar in the fridge for up to 3 days.

Notes

You have to be careful with garlic and cumin. Since too much could kill the subtle flavors of the coriander.
