Creamy vegetable soup with soft cheese

Ayyy yesterday was one of those days when you get home at a thousand, with 300 things to do still, bathe the little one, prepare tomorrow's food, order, and have dinner for tonight in which you bathe the little one! What did I come up with? Well, just that day my co-worker had brought a delicious soup with cheese, so it was clear to me: frozen vegetables, a chicken broth that I had, and soft cheese. It was actually an experiment, but what if I told you that there was not a drop left and we all repeated?

So in 20 minutes I made one healthy and delicious express soup. You can complement it with a second of grilled fish or meat if you are in a hurry, sausages or French omelette, which is what we did. Very simple express soup with vegetables and soft cheese, ideal for a quick healthy and nutritious dinner. Ideal for the little ones.

Ingredients

• 40 g olive oil
• 250 g chicken or vegetable broth
• 250g milk
• 25 g cornstarch
• 250 g of assorted frozen vegetables (the ones you like the most: broccoli, beans, carrots, mushrooms, mushrooms, corn ...)
• 50 g of soft cheese
• salt and pepper to taste

Preparation

1. We put the oil and the frozen vegetables in the glass. We program 5 minutes, speed 1, temperature 120º.

2. We add the broth and program 12 minutes, spoon speed, left turn, temperature 100º.

3. Meanwhile, in a container we mix the cornstarch with the cold milk or at room temperature, stirring well with a spoon or fork so that it falls apart. We booked.

4. When the cooking time for the vegetables is over, add the milk with the cornstarch that we had reserved and the soft cheese. We program 3 minutes, spoon speed, left turn, temperature 90º.

5. We taste and rectify the salt and pepper.

6. We serve on plates or in a tureen.
