As I promised you in my previous recipe, today I leave you this post to explain how I make the crispy bacon and ham. Now with Christmas they will be very good resources to decorate creams, soups or sandwiches.
I also wanted to apologize because the photos are not the most beautiful in the world, I had them saved without the intention of publishing them, but since there are many of you who have asked me how these crunchies are made, I thought you would like to see them even if they were not too beautiful? because they are quite explanatory.
We are going to use two techniques: oven and microwave. This way we give more possibilities for those who only have one of the two things. In addition, this technique is very good because we eliminate part of the fat that the ham and bacon contain and that will be collected on a kitchen paper.
Crispy bacon
Preparation of a crunchy ham or bacon, ideal for garnishing our creams and soups, accompanying salads or topping montaditos.

Ingredients
- Sliced ham or bacon (without any fat) or cubes
- Kitchen paper (if it is in microwave)
- Baking paper (if it is baked)
Preparation
We take a flat plate or container and place kitchen paper on the base.
We place the slices of ham / bacon one by one without overlapping or the cubes distributed and separated from each other.
We cover with another sheet of kitchen paper.
We put in the microwave to maximum power 1 minute. Let rest 30 seconds and we reprogram 1 minute at full power. We let others rest 30 seconds and we move the slices or the cubes a little so that they do not stick and burn. And again, we program 1 minute at full power.
Taking care not to burn ourselves, we take the plate out of the microwave and see how the ham / bacon is. If we have sliced these they should be much smaller, wrinkled and a little dehydrated. If we have put taquitos they must be cooked, toasted and also smaller. If we see that it is still raw, we reprogram 1 minute at maximum speed.
As you can see in the photo, the grease has been impregnated on the kitchen paper.
When we consider that it is, we must let it cool down. To do this, we carefully remove the bacon / ham from the absorbent paper and place it on a clean plate.
We hope some 15 minutes Let it cool down and you will see how hard it will have become. If we have used slices, it is a good time to cut them in the way we want.
We preheat the oven to 180º.
We place a sheet of greaseproof paper on the tray.
Place the slices of ham / bacon or the cubes on top and cover with another sheet of greaseproof paper.
We put some weight on top (for example, another baking tray or a container suitable for the oven).
We bake 15 minutes at 180º.
We take out, remove the slices carefully to a clean container and let it cool.
We already have our slices ready to cut as we wish.
