Crispy Chicken Corn Wrap

Today we are celebrating!!... because... today... our colleague Ascen has a birthday. CONGRATULATIONS COMPIIIIII! And after the congratulations to Ascen, today we propose a healthy and easy-to-prepare starter or dinner: crispy chicken and corn wrap. The best: that we can have the filling in advance a few hours before or even the day before and this will make it even easier for us.

The filling is a bit free depending on your tastes and what you have behind in the fridge and want to spend. In this case, I have used onion, peppers, chicken, lettuce, corn and cheese. Cheese and chicken are really a must.

We have used wheat tortillas, but we can use corn tortillas. Once we fill them, we will pass them through a pan to toast them so that they are crunchy on the outside and also the cheese is melted inside and it is honeyed and juicy.

Juicy and crispy chicken and corn wraps, toasted on the strength and honeyed on the inside, full of flavor. They are ideal for a dinner or a snack with friends. It's delicious!

Ingredients

• 500 g chicken breast cut into thin strips
• 1/2 green pepper
• 1/2 small onion
• 2 tablespoons soy sauce
• 2 tablespoons canned sweet corn
• 50 g extra virgin olive oil
• a pinch of chili powder or a few drops of tabasco (optional)
• 8 wafers of fajitas
• 8 tablespoons mayonnaise
• 8 slices of tomato salad (if they are smaller tomatoes 12 slices)
• grated cheese to taste
• 1/2 head of lettuce cut in brunoise (into thin strips)
• pepper to taste
• salt to taste

Preparation

1. We cut the onion into quarters and the peppers into large pieces and put them inside the glass. We add the oil and grind 5 seconds, speed 5.

2. We fry 8 minutes, temperature 120º, spoon speed. We take out of the glass and reserve.

3. We now add the chicken pieces. We place the butterfly on the blades, and program 10 minutes, spoon speed, left turn, temperature 120º

4. We add the soy sauce, the chili, the salt, the pepper and the corn and we program 5 minutes, spoon speed, left turn, temperature 100º.

5. We put half of the wafers on a plate and heat it in the microwave for 1 minute at maximum temperature.

6. We are filling them with a tablespoon of mayonnaise, a little lettuce and the chicken filling, a handful of grated cheese. We wrap and close with the two ends inwards. We put the fold down so that they do not open.

7. We do the same with the other half of wafers.

8. Prepare a pan and brown each wrap on both sides until golden.

9. Ready to eat.
