Crispy peanut cookies

Preparation

1. We will start by removing the skin from the peanuts. We introduce them in the glass and chop them during 2 seconds at speed 5. We withdraw and reserve.

2. We chop the cheese into small cubes, put them in the glass and grate it by programming 10 seconds, progressive speed 5-7-10.

3. Add the flour, the yeast, the egg, the butter cut into cubes and season with salt and pepper. To mix we will program 10 seconds, speed 6.

4. Add the reserved peanuts and mix during 5 seconds at speed 6.

5. Remove the dough, make a ball and wrap with plastic wrap. Let it rest in the fridge for 15 minutes.

6. While covering two oven trays with parchment paper or similar.

7. After the rest time has elapsed, preheat the oven to 180º with heat only up and down, without fan or turbo.

8. Split the ball in half. We will reserve one of the halves in the fridge while we work with the other.

9. Sprinkle the work surface with flour and roll out the dough to a thickness of 4 or 5 mm. Cut the dough into 5 x 5 cm portions.

10. Place in the oven at medium height. Bake for about 15 minutes

11. While proceeding in the same way with the dough that we had in the fridge.

12. Once baked, allow to cool on the rack.
